Strawberry Coconut Cream Smoothie

All I wanted was a bright pink smoothie. I looked at several stores in my area for pitaya and was out of luck. The only pitaya I could buy were in frozen packets, which was far from zero waste. What was a green girl to do?

As I experimented in the kitchen with brightly colored fruits and veggies, I finally found the perfect combination of ingredients to get that deep magenta hue. As an added bonus, this smoothie is packed with vitamins and nutrients, and tastes phenomenal.


  • 1/4 cup red beets
  • 1 1/2 cups frozen strawbs
  • 3 frozen ripe bananas
  • 1 tsp vanilla extract
  • 1 can full fat coconut milk
  • 2 tsp chia seeds



  • Coconut pistachio GF granola
  • Superfood squares
  • Hemp seeds



  1. Add all ingredients to a blender and blend until smooth.
  2. Enjoy immediately.
